Preparation
Step 1:
Separate the egg yolks from the egg whites.
Step 2:
Beat the egg yolks with about half the sugar until frothy.
Step 3:
Next, add the milk, stir again, then sieve in the flour and beat until you have a smooth batter.
Step 4:
Beat the egg whites with the remaining sugar until stiff.
Step 5:
Add the stiff egg whites to the egg yolk mixture and fold in gently. If you like, you can now fold in some raisins or chopped fruit. Preheat the oven to 170 degrees (top and bottom heat).
Step 6:
Place a knob of butter in a frying pan and heat it. Once the butter has melted, pour the mixture into the pan and fry for approx. 2–3 minutes. Then place in the preheated oven and bake for approx. 12 minutes (please ensure that the pan is oven-safe. Be careful when removing it, as the pan handle will be very hot. It’s best to cover the handle with an oven glove when removing it).
Step 7:
Then remove the pan from the oven – be careful of the hot handle – and return it to the hob. Break the mixture into small pieces over a low heat, sprinkle a little sugar over it and fry for another 1–2 minutes. Done. Dust with icing sugar and serve.
